Meat uniformity is an important factor in judging the quality of pork, and its judgment is usually dependent on the relevant official standard evaluation score. This paper proposes a new method for analyzing its meat uniformity based on pork RGB image, namely UC. The validity and effectiveness of approach is validated by the public data reported in the existing literature. The results show that the texture uniformity is effectively measured based on the feature extraction of pork RGB image, UC = 0.8667. The new method has an important reference value for the quantitative study on the meat uniformity, and then to guarantee food quality and safety.
